Fennel Seeds have a subtle, sweet anise-like flavour. Used sparingly they complement fish perfectly.
Try adding to pan-fried onion and garlic, a dash of white wine, chopped tomatoes and black olives, delicious as a topping for baked fish. Also great with vegetables, potatoes and pork.
