Pumpkin seeds are incredibly nutritious and boast high levels of protein, healthy fats and antioxidants. They're also known to help blood sugar regulation, making them a really smart choice for snacking.
We roast ours gently to bring out the flavour and help the natural oils to be released, so that all we need to add is a sprinkling of sea salt to enhance their flavour. If you turn your volume up you can listen to our freshly roasted pumpkin seeds popping and crackling, straight from the ovens. We mill them into a paste as soon as they are cool, to ensure that the flavour is beautifully fresh.
I love to spread this onto wraps before I fill them with veggies or salad. It also makes a wonderful zesty salad dressing combined with olive oil and lemon juice. For the ultimate avocado toast mash a spoonful into half an avocado with a squeeze of lemon juice and spread onto a thick slice of toasted sourdough, top with pea shoots and drizzle with chilli oil.
